Not having the option to organize your own watchlist is the biggest annoyance for me. Some categories make sense, others don't. It would be so much nicer if users themselves could decide what categories they wanted to use and how they would want to call them.

I agree. I have my own system, but it is hard to remember sometimes and wouldn't make sense to someone who was looking at my list for suggestions. It would be nice to Rename them, Add Custom, and/or Write a Description for these tabs. For example, I use "On Hold" for dramas I plan to watch but don't currently have access to and "Dropped" for dramas I liked okay but just stopped watching. "Not interested" is only for dramas I dropped because there was something offensive or irritating about it. This feature would also satisfy those who would like a Rewatch tab. 

Yassss!! I'm trying to use lists but they're just not working for me: hosted in a different section of the app and they don't have the same functionality as your watchlist.

We can't change how the system work but we can work around it. It is something I have been thinking for a while too.

I really like the app (I hardly ever look at the website). It would be great if we could rename the sections under the watchlist and add like 2-3 more sections.  The lists are a nice idea but a bit of a miss for me as I can't add items straight from the search in the explore section.

Renaming is possible, but the status cannot be changed. Additionally, we cannot simply add new categories due to the way the system works. We do plan to implement something similar to what you want, but it will differ behind the scenes. These statuses are necessary for tracking and without them, the data could become inconsistent for everyone.
