Whether they be just cross-dressing and, due to circumstances, need to act a certain way, or if they just happen to have swapped bodies, these are gender bender shows I've seen.
I'm Summarized the plot as much as it related to each of their circumstances. (To be on this list, it had to be longer than a scene in an episode...)

1. Bromance
Taiwanese Drama - 2015, 18 episodes
Pi Ya Nuo is a girl who, because of her superstitious parents, has been raised as a boy all her life due to the word of a soothsayer, and won't be able to publicly be a girl till her 26th birthday. One day, she saves a mob boss and becomes sworn brothers with him and thus the show begins and their relationship continues to grow.

2. Coffee Prince
Korean Drama - 2007, 17 episodes
Go Eun Chan is a tomboy and is constantly mistaken as a guy. She finds herself getting a job under Choi Han Gyul as a "lover" to ward off the blind dates his grandmother keeps setting up for him, and later as a barista in his coffee shop aimed towards attracting females (so all the workers are attractive men). Though... attractions between the two start to develop.

3. Dear My Name
Korean Drama - 2019, 6 episodes
I'm pretty sure our main lead is mistaken as a guy, which is what causes problems for how soulmates work in this drama, but I have to re-watch quickly to know for sure. It's a bit sized drama though so it's real quick.

4. Gu Family Book
Korean Drama - 2013, 24 episodes
Dam Yeo Wool is clearlynot a boy... right? I mean, there's absolutely NOTHING that would say otherwise. Suzy DEFINITELY could pass as a man... Now... that's not actually the focus of this show at all. It's just a misconception of Kang Chi (and a couple other) that no one cares to correct. Even Yeo Wool seems to like to laugh about it a bit.

Da Xi is a girl who only really seems to care to find a gorgeous husband. Ji Man is the emperor. One day, as Da Xi is trying to climb a wall to see Shao Yong(a guard she fell in love with at first sight), the emperor catches her, and she ends up falling atop him causing them to switch bodies.

7. K-POP - The Ultimate Audition
Korean Drama - 2012, 14 episodes
Similarly to Go Eun Chan in Coffee Prince, Ji Seung Yeon is simply just "boyish". Her parents sent her to England to a school to play piano, but since she played in her own way during a exam sort of thing(?) she got kicked out, and went to her friend, Kwon Ji Woo's, place without telling her parents. Sunny Management has decided to graduate very famous boy group, M2(although M2 fans are angered at this) and replace with all new members and so holds a competition which Seung Yeon and Ji Woo decide to enter. Though since it's a boy band, Seung Yeon has to keep her identity a secret while she lives with the other members who made it past the auditions and now have to make it through the fan-voted survival show while also working under (most famous) member of M2, Kang Woo Hyeon, with which who's first encounter, and some there after, did not go well.
(Feel like I should warn anybody... this doesn't really have an ending... it was fine up till then though... >.> (still a little bitter lol))

8. Love in the Moonlight
Korean Drama - 2016, 18 episodes
Hong Ra On must masquerade as Hong Sam Nom for reasons we find out later. As Sam Nom, she helps, and gives advice on dating. One such time, as she is helping a client, she ends up meeting the Crown Prince (although she does not know it at the time). Later, due to debts, she ends up being forced into becoming a eunuch. Well, it doesn't take long for the Crown Prince to learn of this, and ends up sneakily helping her as she unwillingly passes. Fun, friendship, and romance occurs after. Seriously though >.<

9. Mr. Queen
Korean Drama - 2020, 20 episodes
Jang Bong Hwan is your usual main male lead. I think about what one of my friends once said when we watched Guardians of the Galaxy. 'We have a male lead. Of course he's handsome. Living life to the top. Very skilled in what he does... and being a womanizer...' However, someone's got it in for him and he gets framed. In an attempt to escape the police, he falls into a pool and hits his head. After a kiss from a lady in hanbok, he finds himself in Joseon... in her body. With clearly a lot to take in, he has to figure out how to survive in Joseon, in the queen's body, and how to get back, or get used to his new body and life.

10. Sungkyunkwan Scandal
Korean Drama - 2010, 20 episodes
Kim Yoon Hee loves to learn and can remember anything she has learned. Unfortunately for her, women in her time don't quite do that. Since her brother is sick, she adopts his name, Kim Yoon Shik, to make money for her family. One day, she ends up helping give answers during an exam which is where she meets Lee Sun Joon, a no-nonsense, by-the-books kinda guy; and they clash. However, although he is against he helping to cheat during the exam, he does recognize her intelligence, and encourages her to enroll in the university. There she must keep her secret while rooming with Yoon Shik and Moon Jae-shin as well as from Gu Yong-ha who seems rather interested in her from the get-go. At least ONE person seems to realizes Yoon Shik is a little too feminine. >.<

11. The Tale of Nokdu
Korean Drama - 2019, 32 episodes
Jeon Nok Du and his family (brother and father) are attacked by a group of assassins, he chases after one all the way to the capital, into a widowed village. Men are not allowed inside. He's got to enter the village, however, in order to figure out the reason behind the attack. Let us meet "Lady Kim" / Kim Nok Soon, Nok Du's feminine disguise. It's honestly so great to see a reverse of the girl-dressed-in-guy-clothing flipped around as more than just a short gag.

12. You're Beautiful
Korean Drama - 2009, 16 episodes
Go Mi Nyeo is a nun, who dresses up as her twin brother, Go Min Nam, in order to help him join a kpop group while he's stuck out in America due to a surgery. She helps him get accepted into the group, however, she'll have to stay there for (I think it's a month?) while they prepare a new song. She soon ends up finding her self getting into trouble, and of course she ends up falling for one of them (and I had really bad second lead syndrome >.<). I guess I can't be too sarcastic with them for not figuring out she's a girl since they explained it away with her twin... So here's a gif of the A.N.JELL boys.

I am adding this as an honorary mention, as it doesn't really play that big of a role, and our main characters already know as well. Thankfully, I thought I was going to have to laugh about them being oblivious again >.<. Anyway, we are given a reason, and she remains dressed as a guy for a good part of the show, thus it is still on this list.
