If he cut the flower, he will die instead of YH. That's y they find other ways. As he explained in the first 10mins of ep27. He knows YH wants to live a normal life, and because she didn't confess her true feelings yet, he decided not to give the HPS back to YH so that she will be safe from those who wants the HPS. TY rather die than give the HPS to YH. that's when BXS stepped in and played cupid hence transferring HPS to YH.
