I guess because she was about to die the pearl turned her..the last time before she died she removed the pearl from her body...and I agree I would like to see them all together at the end too..maybe they did it this way because none of them knew what LiShu was reborn only HaoQing knew...and this time he didn't have his memories from his lives as a cat so it wouldn't be the same. He doesn't remember anyone of them . This is why when the human LiShu went to Wan Hua Valley to lern HaoQing had SanYue train him and be his mentor so they have the chance to meet and fall in love all over again.
