In this new timeline, none of the events in the previous timeline should matter so he won't die as he did in that timeline. The only events that do matter are the ones until the last incense was used up. But by this point, the future him that died is an alternate version unconnected to him anymore.
But considering he shows up to save his brother in the end implies he does indeed use the incense again but that is a different timeline from a new future.
Honestly, still a little confusing to me but this is the best theory I got 😅
I suspect Seo Do Guk also traveled back in time with Han Yi Joo... perhaps he was in the other car that was hit during the accident that eventually killed her...
