For me, ep 7 is not a waste. Without it, I wouldnt know that Jinmu is not totally a villain after all. It also showed how the king is changing in engaging with people - his authority could be exercised not by instilling fear but by connecting or rewarding. He even apologized for inconviniencing the people around him due to the competition. Thats called "character development". I think Cook Maeng has also his own agenda to save Joseon cooks by teaching Gil Geum cutting techniques in case they would be sabotaged (since he was instructed by Mokju to lose the competition). The introduction of the inventor could also play a crucial part later on (but i could also be wrong). The king is no longer naive about the impending coup attempt. A lot of details are in the works in building up the episodes ahead. Thus, it's not totally a waste.

The actor from one of the Ming cooks, the one with long silver hair, was a villain in Alchemy of Souls (another kdrama). His name there was Jin Mu and he was known for that role. We still call him as Jin Mu in this drama since he seemed still like a villain. But he did something good in earlier episode. So, I love him for now. π

Thats the mystery, i guess. Gong-gil in the movie "the king and the clown", while not truly an ally to the king, he too sympathized with the king (cant really remember all the details as ive watched it long time ago). He was also part of a performing troupe but very feminine.
In this drama, I think, writers made him very manly. I guess, he intently got himself close to the king to know what really happened to his sister who died pitifully and have his revenge. As to his decisions moving forward, we'll have yet to see.

After several years from its airing, I finally watched this. The first few episodes happened fast. The medical cases they took on were entertaining. HOWEVER, I grew tired of the hospital politics being dragged out until the end, and yet still had no conclusion on President Do. I enjoy binge-watching good medical dramas, but I found it hard to finish this with excitement. I finished it for the sake of finishing it. Without dragging out the politics, maybe I could have enjoyed it more. I haven't watched Season 2 yet, but I will give it a try.

I assume that they are powerful so they may also be influential to other court officials. - If you'll watch the life of a crown prince from "Under the Queen's Umbrella", some court officials are tasked to be the mentor/teachers to the crown prince until he becomes the king. I guess, he got some support from his teachers until he learned what happened to his mother. He was a good king at first, but he turned into a tyrant when he learned that his mother was killed. You could read his governance from Wiki if you're really interested.
It's a drama. Don't think too much of the background. After watching several dramas, i just learned to accept was presented to me and let go of the logic for my own entertainment and peace of mind. Haha.
