Hm since you've probably watched all the big ones, have you tried Maiden Holmes (2020)? It's definitely more romance-heavy than most coroner/ crime solving shows but I enjoyed it as a lighter watch. A decent mini-drama is A Familiar Stranger (2022).
Legend of Shen Li (2024) and Love Me, Love My Voice (2023) have a much slower pace so some people find them boring, but I enjoyed them as healing shows. Super mature relationships - they actually communicate haha.
I'm not sure if you've outgrown youth dramas but there's Lovely Us (2020) and Forever Love (2020).
I haven't watched these ones but reviews seem to be good - Falling into You (2022) , Angels Fall Sometimes (2024)

i'm pretty picky with my dramas too - can't stand damsels in distress or miscommunication tropes. Do you prefer costume dramas like JoL, or modern day ones? Additionally, do you like shows that have more or less focus on romance?

yess they also have humour in it. I usually dont like those harem/ court politics stuff but this one + Story of kunning palace weren't too complicated/heavy for me to watch

Lusi feels more like Yang Yang's lil sis than a s/o in Who Rules the World but it's honestly my fave role she has taken up. We love a female lead who has brains, can fight and has humour
