Girl, if you like meaty plots like you said, Rebel Princess needs to be tmr not someday 😭 There is romance, but there's so much more going onnn. So much goes on in the state, initially, her family seems perfect and is all connected to the crown, her Aunt is the Queen from her dad's side, her Uncle the emperor from her mum's side and her father is the prime minister. Having all these people in power can become more complicated than you might think. She often calls herself Naive as the show goes on, for not recognizing things as they were at the time. I HIGHLY recommend it might be your next best watch, idk. Her marriage is also a political one that she has to navigate properly.

One of my favourite things about Story of Minglan is the acting, how natural Gu Ting Ye and Minglan as well as the rest of the cast acted and you can find it here with Ci Sha and Ren Mi, the acting and chemistry is delicious. I wouldn't say it's all romance but looking at your watchlist I'm not sure if you'll care for the plot outside of that because the leads are the main selling point for me, The Fl and ML both know how to cheme to ge their ways and the ML loves to play the long game with his schemes, similar to Gu Ting Ye. This defss could've done well as a longer show, I actually want to see the leads in something similar to Minglan, Rise of the Pheonix because they can hold their own.
A lot of people praised Ci Sha for being able to act well alongside the actor that plays Chen Ping Ping in JOL, but Ci Sha was in the creation of the Gods, so anyone who went through that gruelling training has incredible potential to me. He also acts alongside Jackie Chan, Tony Leung, and many veteran Hong Kong actors.
Ren Min was in Serenade of peaceful joy, not sure if you've watched that and her debut movie "Cry me a sad river." a Best Newcomer award at the Beijing Film Festival. After doing some research I think her career was a bit stunted by some controversy after starring alongside a certain actor
