"She upset that he's asked her never to set foot in his place" which scene or dialogue gave you the impression that she was upset about that?
I interpreted it differently. Danshim seemed to think that Lee Hyeon hated her after the investigation, when in reality he still longed for her. She only realized that after Segye told her about his dream. Could it be that you misunderstood the 'hate' part and thought it reflected Danshim's feelings toward Lee Hyeon?

Then "one small flashback and she is already uninterested in the relationship," where exactly did you get that from?
Throughout episode 9, the flashbacks actually led Seori to understand everything and realize that she didn't want to repeat the same mistake. To quote her narration:
"I couldn't express my feelings." "I only rubbed the stone like a fool and clenched my fists." Then "It's all over now. No more acting like a fool. I'm done with that."
After that, she literally ran off excitedly to see Segye while bringing the medicine she had bought for him herself.

So i'm genuinely confused, because it feels like we watched two completely different dramas. That's why i'm struggling to understand your interpretation of Seori's character
