I believe that you're not quite familiar with rules in palace, their culture yet. This is long korean drama for people who are a bit familiar with their rules and actions that are taken in palace. This is also for lovers of Korean history and royalty. I, myself, can say that I'm well familiar with it.
Let's start with music. Music is really well composed. To have many different music for every scene, it's not only useless but also money would be spent for nothing since OST is not getting popular easily. I actually love their few songs, especially that one song that plays in a bit sadder scenes. That song is aggravated in my mind, and I get chills everytime I hear it, I just love it. Also that's a good strategy for watchers to remeber songs, if many different songs are played you wouldn't remember any. It's actually smart. They made few songs, those songs are immediately associated with the show and many people love it.
Let's switch to story. Yes, it has MANY plots which makes it more interesting and guess what, it's drama. Drama has many plots, but rarely are they interesting. Plots in these scenes are interesting, sometimes more sometimes less. There were plots that made me angry, not at the series but I genuinely got angry at how bad I felt for main characters. The plots you consider "idiotic" are actually reasonable. You can't just murder the most powerful man in Yuan dinasty. He constantly has people around him (sometimes it's not shown, but in this era most powerful people were never alone since they know they can be in danger). It's not easy to just "stab him" since he was a warrior / general back in his young days, he might be old but he still has skills and ability to protect himself. He also knew that Emperor, a coward at the begging, wouldn't dare to even breath near him if he (Prime Minister) commanded so. I believe that the plots you didn't understand are caused by your lack of experience with korean historical dramas. At my first korean historical drama, trust me, I didn't understand anything. Ki-Yang known as Seong-Nyang is very smart and powerful character. She knew how to adapt herself in new situations. Therefore, she couldn't just kill the Emperor. She wanted to revenge everyone, therefore she couldn't just kill him to lose her life. Also, since she is now in palace she has to act like lady. In palace Concubines and maides and other females, are in ranks and they must act according to rules of Ladies. They can't be manly, she can't act like she used to. She has to keep her life safe and keep her dignity as Lady. That's why she couldn't be "rough" like she used to be, she is not representing male role anymore but a female role. Male role is there to represent her hard experiences through life.
She had to take care of Emperor, she is aware of her low rank, she is aware she couldn't do anything. Even if she had multiple chances to kill him (whether it was alone time or in public), she couldn't. Someone would've stopped her before she 100% killed him (just stabing isn't guaranteed death), physicians would have enough time to save the Emperor... however you look at her chances, she couldn't, same thing with Prime Minister. Many wanted him death, but many who are close to him are scared of him and his power (his power doesn't just come with rank, but with money he collected and authority he has over the court/king).
Let's talk about ending now. If you just casually skipped 20 episodes (especially if you know that this show has many many plots) you can't expect for ending to be reasonable and understandable. She didn't become evil, she just became powerful. She never hurt innocent and she always was on the side of innocent people. Therefore, I can not understand how she became "villainess-ish".
Out of all, I respect your opinion, but I recommend you not to rate shows and give negative replies and low ratings because you're not familiar with the culture or history of the region of the show you're watching. I recommend you after/if you learn or get familiar with it's history, traditions, rules, hierarchy and ranks, to watch it again. You will enjoy the show much more. Watch modern korean dramas to get to know their culture first, then after sometime slowly start watching historical korean dramas. Watching historical drama for kdrama beginner is definitely a big mistake ESPECIALLY if the show has over 20 episodes...
