Bring water to a boil, blanch the ribs until they change color, then take them out and set aside.
Rinse the pot, heat some oil.

Cooking Q&A

Braised Ribs
Prepare chopped ribs.
Bring water to a boil, blanch the ribs until they change color, then take them out and set aside.
Rinse the pot, heat some oil.
Add star anise, spices, scallions, ginger, and if you like spicy, some dried chili. Fry until fragrant.
Add the ribs back in.
Add light soy sauce and dark soy sauce until the color turns a nice deep brown.
Add enough water to cover the ribs.
Simmer on low heat for about 40–50 minutes with the lid on.
When the sauce is almost gone (but not completely dry), add some rock sugar and turn the heat to high to thicken the sauce.

Spicy Crab
Even simpler.
First cut the crab into pieces.
