Tried the frozen veggie kimbap from Costco and it was surprisingly really good! Comes in a package of 6 so I definitely see myself having/buying these again for quick dinner plans (takes 3 mins to cook in the microwave and ta-da!).

It’s so nice to find something frozen that actually tastes good.  ^^. Wish we had a Costco nearby so I could try it.

I've tried the dumplings and lasagna from there too and can vouch for them! Wayyyy better than some of the other frozen ones I've tried before. I like to have some frozen entrees as options on busy days where you just don't feel like cooking but also don't want to buy out all the time🥲 Hopefully you have a place nearby, that's not Costco, where you can get some actually good tasting ones?

Green peas, zucchinis, carrots  and potatoes with breast chicken cooked in tomato sauce, with some  sourdough bread and feta cheese.

Just completed my classes for the day, and could only think of ending it with some BIRIYANI!!
it's the best of the best.  Its a part of indian cuisine, and different parts of india make this differently...but they all taste great! its basically-Fragrant rice, richly spiced, layered with tender meat and then steamed.
TASTES AWESOME!

Chinese takeaway : Chicken fried rice, vegetable spring rolls, sweet & sour chicken hong kong style!

Mission BBQ

Family here for an early Thanksgiving.

Hot jalapeño dip with tortilla chips while I was cooking. 

Maple rosemary baked salmon, collard greens, spicy roasted zucchini, and pasta with Parmesan and fresh basil. 

Tomorrow will be the main dinner. 

Turkey, dressing with sausage, carrot and squash  casserole, mashed potatoes, cranberry sauce, sweet potatoes.  No shortage of carbs and beta carotenes!

Maple pie for dessert.  First time I’ve made this pie. The flavor was really good but the texture left something to be desired.  Something like a cross between flan and pumpkin pie consistency. 

I also made the pumpkin brownie bars I experimented with a couple of weeks ago.  They were a hit. 

Also had a veggie and pickled veggies platter to snack on. 

Tomorrow will be leftovers. This Butterfly is done cooking! XD

t's getting colder here now so I made miso soup (with lots of tofu) and tuna mayo filled onigiri. Made the onigiri with microwaveable sticky rice for the first time and it was ok though I do prefer cooking the rice better (more flavourful).

The family devoured my carrot casserole, I barely had a serving,  and it's my favorite side dish so I made another one today to eat along with chicken and sautéed kale.  There's enough to freeze individually for lunches or dinners when we want it again in the next few months.
