Started off training my new helper with easy recipes. The first is pan fried sea bass fillets with intense lemongrass infused broth. This is super easy. This dish also tastes superb with cod or any other kind of similar white fish with nice skin that crisps easily and tastes good if that is easier to get for you. I started making this years ago when I lived in NY and I could easily get black cod fillets. I used to have it a few times a week bc it was so easy! I use sea bass here bc it’s easier to get than black cod. I believe occasionally you can order fresh lemon grass on Amazon. You can also use lemongrass powder I saw they definitely have that on Amazon as well. You can use the powder for tea infusions it’s delicious and very anti-inflammatory.

When we lived in a different state I had access to a greater variety of items. Lemon grass was carried in a store I used and I was able to try it in different recipes. Frozen seafood options are fairly limited though we have various white fish. We do have about fifty different brands of BBQ sauce and salsa on the shelves though! 😄

I hear you on the limited food choices - I went to college in the Midwest, I remember vividly how I was in culture shock 😅. Cod and seabass are big fish, they travel quite well frozen. But you can also use the lemongrass powder in recipes for chicken. Vietnamese lemongrass chicken is another one of my favorites. I have been making it for so long I don't have a recipe but it is close to this one. The main differences are: 1.) I skip the garlic I think it overpowers the more subtle taste of the lemongrass, 2.) I go to town on lots of shallots and esp if you are using lemongrass powder which is dry, 3.) I usually skip the sugar - if you need some sweetness just 1 tbsp of honey is all you need and 4.) the oyster sauce is also optional it tastes just as good either way and 5.) I add 1-2 spoonfuls of curry powder or tumeric - either works. Its a very versatile marinade bc besides the way shown in the video you can use it for many variations of chicken 1.) grill it - best for chicken thighs with skin on 2.) bake it - skin optional, 3.) marinate and roast a whole chicken or 4.) pan fry chicken breasts. You can also use it for grilled pork shoulder.
PBG--The chicken dish looks delicious! Thanks! Something I can try on relatives when they visit. Due to hubby's diet, I rarely cook meat dishes, usually only on holidays or with company. I make small portions of chicken or ground turkey and freeze to occasionally have with my lunch. Going vegan has dropped his A1C miraculously and lowered his lifelong high blood pressure. He's gotten off most of his medications. It's a struggle to make interesting dishes as he's not a fan of garlic or much spice or tofu. I have to get creative with beans, lentils, complex grains, nuts, and veggies. One of the reasons I'm thankful for the Yeung channel you shared. Anything for inspiration!
For anyone who might be lurking wondering what this forum is about, it's a place to post what you eat, favorite meals, and/or recipes. If you come across a good drama or Asian film focused on food that's okay, too! If you have good sites for food prep those are also welcome. Most of us have faced the frig or pantry wondering what on earth we were going to make for dinner

@Iankyo I watch Ian more for entertainment than cooking ideas as he never fails to make me smile. He's funny, loves his wife, makes mistakes, and is self-deprecating. He quit being a special education teacher last year to become a YouTuber full-time. Not always diet friendly, but when you want to splurge, he's got your back. His potato soup recipe is decadent. He has episodes on meal prepping for the freezer or frig. He is constantly evolving as is his weight.
@PeachBlossomGoddess turned me onto @Yeungmancooking. Like Ian, he's relaxing to watch with a very soothing voice. Yeung prepares easy to make and tasty vegan options.
@NutritionbyKylie is a dietician whose philosophy is what can you add, instead of taking away. She's an omnivore but does focus on beans and high fiber food and veggies. Her recipes are usually easy as it seems much of her audience deals with health or mental health issues with food prep being a strain. She uses her rice cooker a lot as well as sheet pan baking and salad making. She also does meal prep for the freezer. She and Ian are both originally from Hawaii so you'll see those influences.

Wow - great job!!! I have a 3 good friends struggling with their A1C at the moment and they are all skinny, athletic and diet conscious people. Sadly their issue is they travel between time zones too often and don't sleep well - much harder to fix with diet.
I think both of you could benefit from adding lemongrass into your diet - it can be just as simple as drinking lemongrass tea.

You can try the powder but if you can order fresh lemongrass once, you can even plant it from the stalks - it grows like a weed. My bro grows it on his roof and I have managed to from my planter box as well. This guy makes it more foolproof but I have had great success just cleaning it the way he does and sticking it straight into the planter box. Don't try to grow it from seeds its much harder. The only thing I don't like is that left to itself it grows into an ugly unkempt tall grass but since you only need the bottom 1-2 inches, I trim off everything over 4-5 inches ruthlessly. It still survives/thrives even. Its really a weed IMHO.😅😂

Your friends might try going vegan for a month or two and also avoiding cooking oils whenever possible. Hubby went from an A1C of over 12 down to around 5 in a matter of months. He also eats Amla (Indian gooseberries) and ground flax. The erratic sleep is problematic for blood sugar. I wish them well on their health journey.
