Firstly, having 2 side couples is a Chinese formula. It's what the Chinese audience likes. The drama was made with the Chinese audience in mind. We international viewers should accept that unless the Chinese audience starts to dislike them, we're stuck with it.

Secondly, those two side couples are novel fan faves. So much so that in the published novel, they expanded their stories. And so we get that in the drama (with changes). This is common with many drama adaptations. The novel's extra chapters get integrated into the main story flow.
