Because Eunoh is well-aware that Jihyeok needs her knowledge and experience, she came up with such a harsh condition. That's why I said Eunoh is manipulative and unreasonable and she is not even the cafe owner. Eunoh is still sore that Jihyeok rejected her offer to be in a relationship with him. But she had completely forgotten how he has helped her deal with the loan sharks who came to the cafe to cause trouble. He also offered her a $20,000 contract. Jihyeok is not a stranger but Eunoh knew him since university days.

Why is it she can continue to work in the cafe, on a large table, in bright and pleasant environment with good ventilation too? While Jihyeok has been working in a cave-in environment. 😬
