I think a lot of cdramas have now been packed with so much kissing and stuff that, this is now the audience expectation. Yet most cdramas in the past were not like that.

I think it makes sense she is overcoming obstacles fast. She essentially has a cheatsheet for life with going back in time, be it parallel world or not. I think of it terms of myself going with all I know about people in general and how the business/market changes, I would be better equipped to navigate business and personal life without letting stuff get the better of me . She has had struggles but with her knowledge of how people are she resolves them quickly and with her learning from her mistakes of being a people pleaser and shrinking herself in her modern life didn't help her. I think the romance is what I expect from a slice of life drama, simple and mature, I think its not meant to be a romance focused drama more to do with business.

I think you are missing the fact that she is a person and she doesn’t like him. Her thoughts and feelings matter too. Never has liked him, she just happened to save him. Someone can have interest in you but it doesn’t mean you have to like them back, sincere or not.
