Because he doesn't believe that his uncle orchestrated everything. He believes everything was planned by NH and he blamed his uncle. By this point CGH is so far gone into his delusions, no amount of truth can dig him out. It was already shown before that he doesn't care about real truth, he only cares about the truth he believes in and if others don't believe it, he doesn't have a problem with fabricating evidence to prove his delusions.
This appeared on my Netflix recommendations, so I thought why not, it looks bright and silly and stars Satoh Takeru. I'm in! Initially , I thought this would be a fun, educational movie that I can relax and laugh watching. I didn't expect it to get emotional, but it did. Yes, this movie made me laugh and it was cute, but it also doesn't shy away from showing emotional and darker elements as well.
Just finished it and I must say whatever flaws this drama has (and it would be a lie to say it's flawless), it managed to entertain me from beginning to the end with hardly any boring moments. The biggest reason for that for me personally is the fact that there are actually many lovable characters in this drama and I liked watching them even if they were just goofing around sometimes. The actors did really well portraying their characters. Despite the "rocky" relationship of their characters, LYN and LYT share great chemistry together.
While this drama is mostly on the lighter and comedic side, there are also very profound conversations that the characters have with each other.
It's visually stunning with a fitting OST.
There are a few things that bothered me, but overall I enjoyed this a lot.

What happened with the Empress is actually very simple. The Emperor only loved her and didn't love Nan Heng's mother. In addition he was afraid of the growing strength of the Gao family, so he blatantly favoured the Empress, Nan Rui and the Chu family. Nan Heng's uncle is highly ambitious, so his goal from the start is to put Nan Heng on the throne. The Empress was in the way of that, so he is the one who organized the assassination. He didn't expect the Emperor to blame Nan Heng and make his life worse. Although at the same time he always wanted to make Nan Heng more ruthless and only depended on him, so it worked in his advantage anyway.
I'm on episode 18... does the Emperor ever get any better? I want to cast him into the fires of hell at the moment.
I wouldn't call it better, but I finished episode 33 now and he's treating Nan Heng better. To me he's still the same horrible person, but his treatment of his son has at least changed.

I suppose that's one way to look at it. It doesn't take away that there are also other ways to interpret it. Unless the writer clarifies, there's no way to know what the intention was. I will agree that Chu Gui Hong is not written very well. As you said, there's no gradual progression. He goes insane too fast. However, I still have to take into consideration that it's not the real world. Nan Heng and Chu Gui Hong are written as rivals in the original script, so they are forced to be rivals even when she makes all the changes. If Nan Heng is the good guy, as his rival Chu Gui Hong has to take on the role of the bad guy.
Also, we are aware from the beginning that the original script is bad. That can also be a contributing factor to the way things progressed.

Based on some characteristics she actually might have been. She's the more logical and less impulsive of the two sisters. But she's also very idealistic and romantic, so I don't think she would have fallen for him.

Based on her original intention of just enjoying the "noble lady life" a bit longer, she doesn't even need to avoid any of the plot in the script. Just let it unfold, play her part and not get affected and once it's over, return to her world. That way she can still enjoy the noble lady life for a bit longer. I do understand that once in the script world, the people around her are real people and she can't help getting involved, but in that case she should give everyone the same treatment. Not single one person out and blame everything on him. It's understandable in the beginning, but it went on for too long.

Nan Heng emerges as the misunderstood hero and his rival turns more and more evil as the story progresses. Maybe that's the whole point. As you mentioned he's Nan Heng's shadow. The more Nan Heng changes into a good guy, the more Chu Gui Hong turns evil.
I'm on episode 23 now and 4 of the supposed "iconic scenes" have happened now and none happened the same way they did in the original script. Why is she fixating on them so much? So much has clearly changed. Most of the characters are not like they were in the original script. I just don't understand why she still holds the original script as some kind of holy text that will happen as she read it, while everything around her is clearly telling her it's different. She needs to catch up and realize this soon.

Song Yi Ting treating"Li Shi Liu" the same way Nan Rui was treating her and not even realizing it is actually a little sad. She pretends to be all intelligent and elegant, but in the end she's just a sheltered noble lady. Painting 73 paintings of her crush in 3 days is ... something.
Nan Rui is definitely not Emperor material. The poor thing gets yanked back and forth by everyone around him, he's not particularly intelligent, strong or brave. He's also not cruel and vicious like his father seems to be. Just a regular innocent, easygoing guy that should be left alone to live his life. I hope nothing bad happens to him and I also hope he doesn't turn into a junior version of his father.
That's probably why it's so funny 🤣 All the male leads from dramas I watched just flashed through my mind when he said it. Then I laughed even more when it actually worked on her too.
