Why am I -using powers during the day? because Wu Zhen was half demon without powers during the day but she captured the gold spirit using her powers in the middle of the day. Basically Mei Zhuyu sealed Gui Ying inside of his body in the past instead of tiny Wu Zhen so the present Wu Zhen is a full demon. That's the point of introducing the gold spirit

No he wouldn't because he would have to cultivate his powers to use them, it's a common aspect of cdrama, he didn't know he had them and then he trained to be a demon hunter so the demon part in him stayed dormant.
