So, this may be kind of a hot take but I think a lot of the reasons season 2 has seemed over the top and jilted so far is because the screenwriter didn't really have anywhere to go, because Vincenzo really was essentially the Fiery Priest part 2.
I always call Fiery Priest a Vincenzo prototype (not in an insulting way), since they have a lot of similar characters, themes, and plot points. The big difference is Vincenzo has a higher production quality, and the writing feels more fleshed out. What I mean is that, the screenwriter took his experience from writing FP and made Vincenzo from that.
A sequel/season 2 should strive to be better than the original while still keeping the essence the same, but what do you do if you have already written that, just with different characters? Where do you go? You can't do the same thing again - people will notice, so really the only thing to do is get bigger. Which in this case, means exaggeration and excessive jokes and acting.
To me, there was never a need for a fiery priest 2 because as much as I loved the first one, the screen writer built upon it with Vincenzo instead. I think it will be very interesting to see where this goes, and I do not mean any offense to either of these shows, but it really does seem like the writer has used up a lot of the nuance that made Vincenzo and the Fiery Priest so loved.

Yeah, I know Shamanism is an important part of Korean history but I do think there are historical shows that have handled it way better - Moon Embracing the Sun for example. I think over all for me, there were a lot of interesting intentions and ideas in the show, they just weren't written well.
