I am just guessing since the original episode count was 48. Yeah you are right the dream scenes wouldn't add up to 8 episodes. There must be some other content that was cut during post-production.

Some of the more notable ones are:

She dreamt that Prince Su will die young and she will have to die along with him. Its shown abit in episode 9 (the scene where she was trapped in the coffin). when she had a competition with the spoiled princess and she suddenly faltered. Which is why she kept telling Prince Su that he will die young and that she didn't want to die.

Also how she dreamt that her father will get in trouble and sentenced to death due to a mistake in the poetry competition . So she tried hard to get an invitation to Ju Shui Valley in order to prevent that from happening.

In episode 11 when she suddenly ran away from the temple and missed the date with Prince An, it was when she dreamt that her brother will get in trouble and wanted to escape with him to prevent that from happening.

I feel the same way. I have nothing against them (yes, they are sweet) but their scenes contribute nothing to the main plot.
