Tonight I cooked white beans with petite diced tomatoes and fire roasted green chilies.  Served with roasted sweet potatoes and sautéed fresh mushrooms and spinach. Yum!

Tried something new tonight-Mujadara/Mujaddara with lemon yogurt and a cucumber salad. Hubby loved it which was a pleasant surprise.

Bought some new spices (for us) and made Harissa Roasted Vegetables with Bean Puree and Baharat Walnut Crumble. I didn't have raw walnuts so I used raw cashews. I also had to leave out the head of roasted garlic. Hubby thinks mayonnaise is spicy so always taking baby steps.

Not really dinner, but may be one of the most delicious fruity seasonal cake/desserts for me => rhubarb + strawberry + crumbles on top. So cut the rhubarb and strawberry equal in amount into small pieces, add some sugar, vanilla flavour, lemon, let it soak in for 45 min. For the cruble mix soft butter + flour + sugar + some crushed almonds. Put the fruits in a baking form, crumbles on top, bake for like 30 min.

I’ve had this kind of dessert with apples, peaches, or cherries. Strawberry rhubarb combo sounds really good!

Our temps dropped from 90F/32C to 60F/15C accompanied with rain. Made a pot of lentil/brown rice/veggie stew. Thankful for every drop of rain. We’ve been in a drought and desperately need the water.

I have also tried this, its pretty good - peanut butter is a great hack in general Sichuan inspired spicy noodles. But if you love ramen, this chili oil sauce is worth investing in. My helper makes a big batch on a regular basis and we use it to flavor all kinds of noodles. It keeps for a long time. We skip the MSG - its not needed at all.

my mother had a big loaf of bread she didn't eat fast enough so today i made papa al pomodoro and some florentine meatballs to go with it .

turned out good , i don't make it often at all since i don't buy bread much, i think the last time was probably 9 years ago? lol. first time i had it was after we seen it one day on food network when i was a teen n a rachel ray thing was on so i've been using her recipe since. simple ingredients with not all that much prep n it comes together relatively quick. its a sold enough way to use up bread if you didn't finish it before it got hard

My mom used to make something similar to this on rare occasions. My sis and I were picky eaters during our childhood and we were not very receptive to the wet bread concept. If my mom were still alive she would marvel at and probably want to beat us for the way we've both expanded our food outlooks. lol My dad was even less adventurous (beef and potatoes). We did not make life easy on her.💗

lol to be fair wet stale bread does seem a bit gross concept-wise , in the end its sorta like a weird off dumpling , i don't love the texture particularly of the looser bits that touch the water vs the inner parts of the cubes , but i don't dislike it enough to let it stop me from eating it like some meats. flavor of it is good overall tho. i was just happy he liked it since i don't think he like it or the turkey meatballs last time lol

Have you ever made bread pudding? That's something else my mom would use for leftover bread. Of course, we didn't eat it either. Patience of a saint. 🙏

I have a friend who loves it and I want to attempt to make it. I tried once with a recipe that didn't give measured amounts using croissants. After a family gathering I had some leftovers and attempted to make it using the number of croissants listed, but I'm pretty sure the person who wrote the recipe used much bigger ones than I had. I could never get it to set up. The bread was just swimming in the liquid. I finally drained the excess, baked it longer, and it finally came out edible. Barely. The delicious sauce that went with it saved the disastrous attempt. 😂
