4th of July and our neighbors are shaking the neighborhood apart with fireworks. 🎇
(Edit-Fireworks turned into a raucous thunderstorm with 100mph/160 kmh winds and crazy close lightning with driving rain. Lot of trees and power poles and lines down and an assortment of damage around the area. We were lucky to keep our power. Neighbors picked up where they left off with their fireworks until almost 2:00am 🥱)
We got wild and crazy and had turkey burgers. 😆 And I made a Brown Butter Blueberry Crumb Cake. An evil friend showed me this person’s channel. Had to try one of her recipes. It was good!
in an effort to loose weight ( hasn't helped) i prepped 3 days worth of quinoa salads with some sauteed onion,pepers,and mushrooms in it , with a rotisserie chicken breast (shredded) reheated/seasoned in a homemade batch of fajita seasoning , with some cherry tomatoes , avocado , mexican blend of cheese , n some sour cream on top ( was gonna be greek yogurt but he bought the wrong container!) ...
tasted good all mixed up and i was fuller from it but i accidentally killed my wok in the process not realizing the burner was left on between the veggie prep and the chicken heating when he was pulling chk apart for me :( now i need a new one ,.. today we had takeout so a wonton soup n buddha lo mein for me

Quinoa has quite a bit of calories. I don't know if its possible to get it where you are, but konjac or shirataki noodles works very well. Its a very healthy yam based noodle that is only 17 calories per serving. But its usually sold in wet form and you have to rinse it very thoroughly bc otherwise there is a very unpleasant fishy odour to it. And you have to be careful - it also comes in dry form but there are a lot of fake Taiwanese and mainland products that add a ton of starch to it and it therefore has the same amount of calories as any normal noodle. It should be consumed in modest serving - usually 1 packet lasts me two meals so its about 7.5 calories per meal. I usually stick to Japanese brands. Its a wonderful noodle - hard to overcook and easy to flavour - I stir fry it, use it to make soupy noodles from pho to even laksa. I even sometimes just dry fry it in a pan with low heat and then pour curry chicken or some dish with lots of sauce over it. I try not to eat carbs at night so konjac really hits the spot whenever I get a craving to have some for dinner. Since I still eat a fair amount of carbs during the day it just helps keeps my weight stable. A friend of mine used it to replace all her carbs for a month and she lost a ton of weight.

thanks for the info ^^i've honestly tried them tho n they weren't to my pallet and the texture was idk weird to discribe when i tried making them a few times some years ago (wet type) . the bigger issue for me tho is i just never feel satifyed really or full at all with most stuff , the quinoa is a better option than pasta for me since i don't get enough protein (don't like meat much) and iron , and it being fiber helps actually fill me so i don't eat as much. sadly i'm the type who Can easily eat a half a lb of pasta and not be full to with adding that and/or beans instead it can help some days ,... the only other thing that really fills me is a big salad but that gets a bit expensive

I understand what you mean about the konjac/shirataki noodles - depending on what you use it for it can be unsatisfying. I found it is best when topped with a rich sauce. But if you love pasta that's more of a challenge to feel full. I am vegan 2x a month and am never hungry. I can suggest sourdough bread, tofu, avocado and overnight rice, preferably basmati (reheat - half the carbs/starch/calories are gone) as good fillers.

For myself, I’ll precook 2 oz ground turkey patties and chicken (then shred and package ind) , freeze them and they are ready for a quick lunch I just have to add a veggie. They may not be amazing combos but we tend to eat healthier when we have premade elements in the freezer to combine when we are too tired to cook.
Not eating salads right now due to an icky parasite running rampant around here. 😕

My helper of 10 years who is a fabulous cook retired and left me to fend for myself. I am kind of overwhelmed and discovered I may have forgotten how to cook! 😅 Been living off her frozen Thai green curry chicken over reheated rice or konjac noodles for dinner. Luckily I still remember how to bake sourdough so I have just been having egg, avocado and tuna sandwiches with some salad for lunch. Anything that is easy and doesn't involve me messing up the kitchen too much. My new helper arrives sometime next week. I am scrambling trying to pull together all our old recipes. I realised half the stuff she used to make is stuff my mom taught her - I don't even know how to make most of it myself! Its gonna be a long journey before I can eat as well and as healthy again...

Yes I am lucky I to live where most people have live-in help it seems I have gotten too used to it. I work pretty long hours and am just used to my household more or less running itself. To say the least it has been OTT to have to just juggle laundry and I keep forgetting items so I definitely don't have my grocery shopping act together.
Sourdough is super easy to make by yourself - I learned how to do it during covid bc our bakeries were always out of bread. And you don't have to feed your starter all the time that is BS. I only save a small amount and just neglect it in the fridge for weeks at a time - I just keep feeding it a day or two to revive it every time I want to make bread. The trick is your starter always has to have at least doubled by the time you start making bread and then you are pretty much golden. This lady from Foodbod Sourdough makes it super easy - not scalding hot and heavy Dutch ovens and extensive folding and stretching etc that all those super uptight German dudes on Youtube suggest. They make what should be an easy process complicated and their results are not any better. If you want to try for youself, all you need to do is to follow her.
