Started off training my new helper with easy recipes. The first is pan fried sea bass fillets with intense lemongrass infused broth. This is super easy. First prepare an intense broth. - Slice 2 or 3 stalks of lemongrass bulb (bottom 1-2 inches) into thin round slices and boil in a small amount of chicken stock with equal portion of water. Strain out the lemongrass and keep pipping hot. Then pan fry lightly seasoned sea bass fillets with salt and pepper, skin side down first. Key is to get the skin crispy. Remove from pan into soup plate. Gently pour the pipping hot broth around the bottom of the sea bass avoiding the skin and serve with bowl of rice. Simple, healthy omega and anti- inflammatory.

Sea Bass I can find with some effort and a little luck, lemongrass not so much around here. I came across the dried stalks once. I know it's not the same thing, but could lemon or another herbal be substituted?
