Started off training my new helper with easy recipes. The first is pan fried sea bass fillets with intense lemongrass infused broth. This is super easy. Remove from pan into soup plate. Gently pour the pipping hot broth around the bottom of the sea bass avoiding the skin and serve with bowl of rice. Simple, healthy omega and anti- inflammatory.

Sea Bass I can find with some effort and a little luck, lemongrass not so much around here. I came across the dried stalks once. I know it's not the same thing, but could lemon or another herbal be substituted?

This dish also tastes superb with cod or any other kind of similar white fish with nice skin that crisps easily and tastes good if that is easier to get for you. I started making this years ago when I lived in NY and I could easily get black cod fillets. I used to have it a few times a week bc it was so easy! I use sea bass here bc it’s easier to get than black cod. I believe occasionally you can order fresh lemon grass on Amazon. You can also use lemongrass powder I saw they definitely have that on Amazon as well. You can use the powder for tea infusions it’s delicious and very anti-inflammatory.

When we lived in a different state I had access to a greater variety of items. Lemon grass was carried in a store I used and I was able to try it in different recipes. Frozen seafood options are fairly limited though we have various white fish. We do have about fifty different brands of BBQ sauce and salsa on the shelves though! 😄

I hear you on the limited food choices - I went to college in the Midwest, I remember vividly how I was in culture shock 😅. Cod and seabass are big fish, they travel quite well frozen. But you can also use the lemongrass powder in recipes for chicken. Vietnamese lemongrass chicken is another one of my favorites. I have been making it for so long I don't have a recipe but it is close to this one. The main differences are: 1.) I skip the garlic I think it overpowers the more subtle taste of the lemongrass, 2.) I go to town on lots of shallots and esp if you are using lemongrass powder which is dry, 3.) I usually skip the sugar - if you need some sweetness just 1 tbsp of honey is all you need and 4.) the oyster sauce is also optional it tastes just as good either way and 5.) I add 1-2 spoonfuls of curry powder or tumeric - either works. Its a very versatile marinade bc besides the way shown in the video you can use it for many variations of chicken 1.) grill it - best for chicken thighs with skin on 2.) bake it - skin optional, 3.) marinate and roast a whole chicken or 4.) pan fry chicken breasts. You can also use it for grilled pork shoulder.
