Made an Asian-style beef lettuce wrap for dinner (and leftovers for lunch tomorrow ~meal prep). My friend made it for me once and it was so yummy I wanted to try it. Added any and all seasonings I felt would taste good to the ground beef (not even sure if they go together lol) but it turned out good! Recently been on a diet and trying to cut out as much carbs as possible (without losing any of the deliciousness of course) so this lettuce wrap has become a go to (can be subbed with any protein really) :)

I love wraps! Whenever my friends and I feel the need to be healthy, we do Vietnamese rice paper roll and lettuce wrap parties. We just lightly season and grill or poach a bunch of shrimp, beef, pork and chicken. And then we chop up carrots, cucumbers, chives, coriander, basil, mint leaves, chili peppers etc and prepare light Vietnamese and Thai dipping sauces. We also brown shallots and garlic and flash fry dried baby shrimp and anchovies. After that it is do it yourself wrapping whatever you like in either lettuce or rice paper. Its fun, filling and healthy.

I just had Frito Pie for dinner. I've been feeling pretty sick lately and haven't had an appetite for much. My boyfriend remembered that I had said I was craving a Frito Pie before I got sick and decided to make me one for dinner. Thankfully I was able to eat it. 😭
