Something like Chicago Typewriter:

-Epic Story w/ slow burn romance.

-No love triangles. Only very minor Love triangles if any. OR unreciprocated love triangles, where it's clear from the start that the FL/ML's eyes are only on their partner and not the other guy/girl pining for them.

-Happy Ending

Its okay its love

1% of something

Scent of a Woman - kind of a happy ending

Just Between Lovers - currently airing thus I am not sure it will be a happy ending

Kekkon Dekinai Otoko is what I consider slow burn (also one of my favorite Japanese dramas).

I remember Hataraki Man also (from anime/manga), but I don't remember if they showed it in the drama. But that is mostly focused on non-romance stuff. (it's mostly about Work drama iirc)

I haven't seen many Japanese dramas, but I'll check your recommendations out. They look interesting.
