It seems you missed the part where he started having misunderstandings about her. He's been sick all day and he felt like she wasn't paying attention or try to check on him. So it felt for him, she wasn't worried for him. And as a result, he is thinking the feelings aren't reciprocated. So now other girls are telling him that they had something for him. So them showing interest implies to him that he can get his feelings reciprocated from them. Also, she told him she had two guys she wanted to know. So now he's tempted to do the same. He's thinking she not in love as I am, so maybe I should keep my options open too.
I think this is the only show where I panic more when they go on a date than get excited about it. Man, I keep cringing so much. This confirms my suspicion, men need to have sort of experience when talking/dating women. They are so frustrating to watch if they are so clueless😂. I always thought a clueless guy can be considered cute or innocent. But not anymore. You need some experience. And unfortunately this is what this show gives them. I guess they have to make even more mistakes to learn even more. Its unfortunate for the girls who want to develop something from this show. It won't work unless they are willing to be more patient and take a lead sometimes.
So I am not expecting any serious relationship to develop from this show. They should just show up make lots of mistakes, learn a lot and try to use that in the future relationships.

I am new to the Bi sexuality thing. I am straight but I guess I got curious to check out the show. From what I have seen, even though they claim to be Bi, I see they have a stronger preference to the same sex. Even their chemistries seems stronger with the same sex than opposite sex. Thats just what I saw at a glance. It seems like settling with the opposite sex is like their last resort. Like girls have stronger attraction to other girls. But if that doesn't work, oh well, I guess I will go for the boys then kinda vibe. I say that because I haven't seen any one saying that an opposite sex is their first choice and are looking to make things work first. It seems you are falling to the editors trap. They have less than a week. There's little room for change. It would take an immense amount of effort to have Yukyung changing her decision. That movie date sealed it for me or them. She seems mature in how she handles misunderstandings. She looks to resolve them when they come up. And if indeed misunderstandings happen, I think she has given a lot of herself to Wooyeol to even choose another person at the end. Juhyeon is admirable. I bet you would think so too if he expressed interest so straightforward like he does. But thats just it. You just admire and respect them. To be fair to both of them, they're in a dating show. They're meant to explore on the show and choose the one to date outside it. But we just have our opinions as viewers because we're too invested in them. We like a good loyal man/woman on a show because we picture or relate being on the receiving end of that. So, gender is a huge factor for that.
If you're a girl, you picture a man being loyal to you. So you will be overly critical to the men who are 'testing waters' on the show especially when your favorite girl seemingly has settled with her choice. And vice versa. But if its a girl exploring, who you can relate, oh well, she's just being cautious with her choices. Like @blair told me in the comments below, she has self-respect.
It doesn't look good when a girl throws herself to a man, right? But we love a good story where a man throws himself to one girl even at the expense of him being called desperate or needy. He's just staying loyal to her. We just push the girl to notice him until the show is over. Minju has been loyal. But most, based on your bias, would want her to move on. I am yet to see someone pushing for Seongmin to eventually notice her. See, everyone would want to identify with a girl with options and not without one. If she was so into him (judging by that percentage), why would she make it open for her to be swayed? She likes Wooyeol. At first, it felt too soon to have fallen for him (it was only just 3 days in). So she tried to play it safe and not jump the gun too early. But the feelings were there. Thats why I said she's acting like someone who has been hurt before for just going with her feelings. So I believe this time she tried to approach it a little differently. She decided to sit on it a bit longer instead of going off her feelings. Maybe she won't get hurt like the last time she did that. Wooyeol in that situation would have helped if he was like sure of himself too. Because I think Gyuri would really be expressive if she has that assurance. And Wooyeol would only give that assurance if he gets to meet you longer. Thats why he told the girls that he would need like 3 dates to be sure of his feelings. So in that regard, they didn't get the timing right and they missed each other just like that. Yukyung got the timing right though and things may or may not work in her favor.

I guess the rumors adds up then. They might not be entirely true but there are some hints of truth in them judging by how you have described her. She's not being malicious. In my opinion, she's being defensive. Being open about her feelings sounds like something she can get hurt from. So she would at least try to hide them so you don't catch on them or commit only if she gets some assurance. 'She won't block anyone' just means she's open to someone who gives her assurance. Unfortunately, she is getting some but its just not the person she's hoping it would be. When she's talking to Wooyeol, you could see the 'forced' excitement or laughter. I guess thats how some people cope. But I think she might be hurting as well. And she wouldn't want you to catch on that. So she will try to mask those feelings but that makes her act so weird (out of character).
