Besides having consistently good production and acting (though Cdramas have improved A LOT in those areas recently) dramas are entertainment at the end of the day. People watch them after a long day to relax. Some watch while eating or multitasking, esp international viewers who already have to read subtitles.
Simple stories often work better. One reason Kdramas became so popular is that they don't overcomplicate things but still manage to make them interesting. Dramas aren't everyone's whole life. He is popular but even actors with bigger public popularity don’t get the level of resources he does. He’s getting top scripts every few months. He even landed a high level drama before properly proving himself as a male lead, right after breaking out from mjty as a supporting role.
