There was a whole explanation about it. But to state only main points: He thought he was ready and really wanted to find someone. He also thought he could make it work but as he got back to his life as new solo restaurant owner he found out he don't have time to fully commit to relationship ( like not some casual relationship but real relationship he always wanted to have) He is perfectionist (my observation) so he isn't ready to commit to something if he isn't sure that it work. Not like us - let's try but like he think he need like 90% chances it don't fail.
To sum it up from my observation - they like each other but Cm want to have perfect conditions to date before seriously dating someone he also too scared to hurt JH in future if things don't work out.
