Your memory is very sharp! Quite a number of episodes ago... Now that you mentioned that scene, I recalled what Darim said to Jiyeon. But I was so sure Darim was lying because Gangju told her to use the lie that that they were a couple.
I think Darim started to have romantic interest in Gangju when he dug up the money which he has buried in his mum's land and replaced them under grandparents' mattress. Because Darim loved her grandparents dearly so with the money back in its original location, grandparents have calmed down and returned to stable health.
I always know that there must be a reason if the camera shows close-up of something. I noticed Gangju looked downwards as Seungdon tapped his right hand foot. Gangju looked intimidated when the tapping of the foot began. Then I knew it was Seungdon's signal to Gangju to OBEY. Actually Seungdon has shown his true horrible colours in that scene. I must have missed your remark about Darim's new hairstyle. Because Geum Sae Rok (Darim) has a round baby face, chin-length or just below chin-length hair like a simple bob suits her perfectly. Her photo in MDL with long hair made her look older. Her first hairstyle was in this drama suits her even better. Her current hairstyle is very pretty too.
