I hope these people are actually working with good professional, because from what I know when they have to get into these roles, they have like dedicated chefs and trainers for food and workout, so it's really feasible to drop or gain such weight. As to whether its healthy or not, I hope there are doctors and other staff that track their blood work, etc.

I think you are totally misunderstanding the whole point and motivation of Agent Kim. He chose to lay low, he wanted a quiet normal life - for him and for his daughter. And I seriously doubt, Agent Kim will put his daughter through what he been through and turn her into a "weapon".
