I watched it. You're now comparing apples to oranges though. PMR is a revenge makjang style romance where this is a fantasy romance drama. PMRs pacing was amazing, however that doesn't make it the norm. This pacing is still moving at a good pace. Also, 12 vs 16 episodes changes the pace.
As for your 2nd point.... that doesn't even make sense. They should be in the contract marriage until the end of the 3rd episode?!? Then what? They break up? They started in the relationship? Do Hee had no interest in a relationship until the stipulation was put out AND didn't even know Koo Won, so how does that play out in your head? That would be a completely different story line. I'm seriously lost on how you think there is no story being told in this show when the romance plot is moving along at a faster pace than most dramas. Normally whoever is chasing realizes feelings in ep 5 or 6 then a couple more episodes until it comes out and is mutual. In My Demon, she realized it almost immediately and in ep 4 into 5 he is realizing that he likes her. I haven't seen ep 6 yet so I can't comment on it yet, but that alone is already a faster pace than the majority of romance K Dramas.
If you don't like the slow pacing, watch Western shows. They are faster to the point

I personally think her acting is portraying the character well. It is over the top a bit, but this is the first time in her life that she has had feelings for a guy and him not be hurt so she is giddy and hopeful. I think in real life anyone would be acting a bit over the top and eager like she is.

Yeah. I know they decided to make the movie more romance focused and I actually thoroughly enjoyed the movie I just wish they spent a little more time explaining the fight/powers part.
