Because it's 16 episodes, not 10 or 8. Netflix have never released 16 at once. And the drama is divided into four acts based on the seasons of the year, so the schedule makes sense.
I actually like Crushology 101 as a title. It's a clever play on how introductory university courses are named, and the theme of the drama is Bunny's many on-campus crushes, after all.
Bunny and her Boys was fine, but "boys" is not really a great translation of "oppas", because in English "her boys" often refers to someone's children, not their adult crushes.
They might just not be for you. Based on ratings and reception it seems most people enjoyed the dramas you mention, but we all have different preferences.
