Its two episodes mate. How events unfold from this version takes almost 10 episodes. So Korea version is somehow compact. I wouldn't say rushed considering its going for 16 episodes. And in the Chinese version, the mother of the ML is even more evil than you saw in the two episodes for the K-version. Also, from the preview, the SML meeting his father and the ML's mother returning, that happens almost mid-way in the Chinese version. So, there are some events lost in the way since its a 16 episode drama. But mostly, it is the bond between the new found siblings and the new dads. So, YEAH those 2 episodes can give you the idea of how both versions are different yet similar.
You won't enjoy as much if you compare the two versions. Sadly, I can't help but do as I have seen both. I think the remake would have been such a hit if it was original coz there's that K-drama touch. But having seen the original, it takes away the suspense as I already know how the story unfolds. I guess that's why I think I would have really hyped the K-drama version if it was the original. Nothing to take away from the original version though. It was done splendidly well. Being over 40 episodes, it was much deeper and heart-wrenching than our K-drama remake. So I have to give it to them.

As for Choi Tae Joon, I just think it has nothing to do with his talent. He is talented. But things like this makes me think it has to do with his agency. At the end of the day, it boils down on how good you market a product. With a good agency, he should be able to land good roles and big ones at that.

A weekend drama can actually take between 6-8 months or even a year for production. But the regular 16 episode series takes between 3-4 months. The weekend dramas mean you're tied down to a long-term project. Its like writing a research article and a research project in colleges/ universities. A research project will have you committed longer than a research article. So it has nothing to do with taking time for their family. Its just that Choi Tae Joon is criminally underrated. His last major project was three years ago and even those didn't perform exceptionally well for him to gain nationwide attention. Also, you said he wants to slow things down. His career hasn't really hit the mark. He doesn't have that much option to work with for him to consider that. So it would only make sense if he is well-known and a lot of directors want to cast him that slowing down things would be an option. Anyway, you don't slow things with a weekend drama. Its more of a popularity thing. You take it to gain more popularity or showcase your acting talent to the bigshot production companies.

I might check it out when it comes out and if I have time on my hands. I am not a big fan either. I will watch it or decide not to depending on the reviews. Whether he is average or not, I won't argue about it because that depends on someone's preference or taste. If you don't find him above average and I do, so what?
