I feel like some of ya'll aren't watching closely. She clearly likes him. She likes him a lot. She doesn't WANT to like him. She wasn't lying about what she said to the emperor.
But the entire premise of her second life is not to allow anything or anyone have control over her life or the lives of her family. And her budding emotions are a problem for her, for that goal.

It's not *slow* that's what normal tv viewing is. Everything isn't meant to be fast paced. The inability to enjoy the process and regular pace of things is scourge on modern entertainment consumption and life in general.
Not gonna lie I want more of the second lead couple. I like them more than the main leads. Don't get me wrong I like the main leads, but I'm SUPER invested in couple number 2. lol
