Well what wasn't clear was whether HZ's maid was offered legit wife role (which I highly doubt). A merchant is still higher status than a maid so she would only be another concubine. Her decision is rational. An illegitimate daughter of a (disgraced) official is still a catch for a merchant. She hit on SQ and was willing to be a concubine but was still rejected. She realised how pretentious and unrealistic her aspirations were. This story is part of an entire genre inspired by Dream of Red Mansions. Its similar to those suffocating Victorian era Jane Austen novels where everything is about social status and marrying up and down. Her actions and decisions are understandable in the context of her era.

Well he is not a terrific catch for sure but on whether he is a monster there are no guarantee; it is a risk women still take even these days. All HZ's due diligence showed is he is a bad business man and his household is also disorganized. What I felt sad about is the HZ's maid felt she had better options than the concubines daughter.

As the daughter of a concubine, the chances of her being able to marry into a noble or official family as the legitimate wife even before the Hua family fell is next to zero. As long as fatty is not a wife beater, I think she is all set.
