Well it is possible the writer borrowed from Western mythology although they usually don't do that when there is established Chinese mythology. Chinese audiences may not be familiar with the Western myth or may even scold them if it contradicts the myth they grew up with.

Actually that is only in Western mythology. In Chinese mythology there is no such thing. The phoenix is a celestial animal, the second most powerful after the dragon. It represents the femenine yin in a union of yin and yang at the highest level. The phoenix usually symbolizes the empress as the dragon symbolizes the emperor. That's probably why all the men are after her - she is probably meant to be the wife of the next heaven emperor.

I haven't noticed but my guess is they probably had to dub over some parts and stitch together parts that were dubbed and it probably wasn't done that well.

I believe I saw somewhere that only Feng Wei is dubbed, everyone else is using their own voice. This is normally the case for modern dramas as many chunks can be recorded live. Ren Jialun used his own voice in Forever and Ever but was dubbed in One and Only.

Actually the approach is correct - 妖龍 can be translated as a double noun (demon dragon) or an adjective + noun (evil dragon). In which case translating 妖 as an adjective means evil/betwitching/enchanting is all correct. I would have chosen enchanted dragon but its translator's preference.
