Ms. Min never saw the Seo's car or even knew the Seos existed. They were elsewhere at their twin dead daughter's funeral/burial.
Ms. Min did see Eun Seok taken out of her mother's car, and she did see No Myung Hee drive off.
Ms. Min also saw the unintentional kidnapper's car leave with Eun Seok. She took the license number, kept it, and 28+ years later dropped it on the floor in front of No Myung Hee after the tussle.
The kidnappers did see the Seo's car parked in front of a store after they had abandoned Eun Seok by the bridge--with Eun Seok in the Seo's car! Whoops!
The only connection I see here is that the kidnappers got the Seo's license tag at the store and then--thank you, drama gods--tracked them down 25 years later, undoubtedly in hope of a money reward.

One new thing I finally got only by re-watching: The Grim Reaper's IMMENSE wall of niches for empty tea cups. Each niche with a tea cup was one soul passing through, there are many more empty niches. Unspoken storytelling at its best!

In episode 10, beginning at 30:08, Seo-Hyun says to Ji-An and Do-Kyung, "Grandfather never says to anyone whom he's going to choose as his successor. It could be Father, Uncle Myung Soo, or Aunt Jin Hee's SON."
In episode 12 @12:43 No Myung-Hee tells her sister, No Jin-Hee, "... I am going to destroy you, Jung Myung-Soo, and your SON."
Lest we forget: in an early episode No Jin-Hee & Jung Myung-Soo had a son studying in England. That would be a second Haesung grandson. Will he show up?
And who sent the mystery mail to Choi Jae-Sung? And why?
Anent the quality of the show and the writing: at the 2017 KBS Drama Awards (2017 December 31), the Best Writer Award went to the writer of My Golden Life, So Hyun Kyung. It was announced (English subtitles) that she was absent due to "personal reasons."
Shin Hye Sun (Ji An) accepted the award for her, and said among other things that So Hyun Kyung "has lost a lot of weight." This usually doesn't bode well. And quite possibly affects the writing and continuity of My Golden Life.
