1. Not all monos kill their probes. As long as the probe likes their mono too, there is no problem. Yeon Woo is just assuming that his probe Yoo Han doesn't want to have that commitment. If Yoo Han doesn't fully commit to a life with Yeon Woo, he is indeed in danger but I'm sure he also wants to be with Yeon Woo. 2. The obsession is definitely strong for monos in general. The mom wasn't obsessed because she was married to her probe and had secured the ability to see colour whenever she wanted. I think a relationship between mono-probe could be fine but it can go horribly wrong if the probe wants out.

For your first question I think we're seeing that already happening. Yeon Woo reacts very aggresively when Yoo Han suddenly stops showing colours. He is definitely losing control of emotions and actions during and right after color rush. As can be seen by him completely getting lost in his own world and reacting bad when he loses that.
I think this is mainly just an issue of trust though, as when Yeon Woo knows he can trust Yoo Han to show him colours whenever he wants he won't react this aggressively. This is likely the main problem monos face, a probe they can't trust to show them colours will cause a mono to be more aggressive.
I don't think its a natural impulse for monos to kill probes. I think its just an unlucky byproduct of a bad mono-probe match since monos get obsessive. In fact, I think Yeon Woo already has a strong attachment to Yoo Han from the moment he first experienced color rush. As he hasn't been putting in any significant effort to avoid Yoo Han at all and even follows him if Yoo Han asks. He's just very careful since he knows the danger a mono poses to a probe, he likely doesn't understand why a probe would even want to be near him.

Not sure if this will happen in drama but its just some extra info to know. -Yeon Woo in the novel describes Yoo Hans eyes as being caramel and loves the way they look. He also has an interest in lipcolour. He likes the colour yellow in the novel a lot too. -Some suspicious stuff by a mysterious person (mayby related to his search for his mom?) happens to Yeon Woo causing him to feel unsafe. -Yeon Woo in the novel constantly tries to dismiss Yoo Hans flirting but will get upset when Yoo Han stops paying attention to him for a second. -The aunt will find out that Yeon Woo met his probe and she will advice him to leave school, which Yeon Woo doesn't agree with because he likes seeing colours (and Yoo Han). -At some point Yeon Woo is sick and Yoo Han literally breaks into the room from the window to visit him.
