Any recommendations? I've actually watched plenty, so I'm wondering if any newer titles came out while I wasn't aware, or any older ones I've missed

You need to watch Page Turner. It's really short but definitely a must watch!

In the CDrama Ten Miles of Peach Blossoms (aka Eternal Love), the main female character deals with blindness for part of the story.

A movie "Always" with So Ji Sub and Han Hyo Joo. The female character is blind.

That Winter The Wind Blows  is the latest adaptation of a Japanese drama from 2002 called "I Don't Need Love, Summer."  I have yet to see that one as it is not available in the US right now.  However, there is also a movie adaptation called Love Me Not that is available on DramaFever.
