I understand the reasons behind short seasons with open endings, but I hate this model.
I make exceptions from time to time, but nowdays anything American produced I ask whether it has an ending before I start watching.
I didn't watch The Glory until the second part came out, and when I heard there was a second season for G creature I didn't even bother watching. it.
I am also avoiding watching the milking like Squid Game, which clearly ended in S1 for me. So, I am not watching it.
I might watch EAW because I feel this is slice of life and there is a room for development, but even that I am not 100%.
This one I will watch only if I know the end is very clear.

Forgive me please, but I am not sure I fully understand the second part of your sentence.
What I meant is that if the show is fully produced by a Korean network then it will have the typical 16 episodes one season (In the majority of cases). Then Netflix/DisneyPrime etc will just buy the streaming rights.
However, if Netflix (or others)authorise a show and they are the ones producing it (even if the talent is Korean) its format resembles the American produced shows. Not always, but many of Netflix Korean shows are short with very wide open/cliffhanger ends.

Mixed feelings.
I escaped from the multi-seasons format of American TV to the 1 season of K-dramas.
But, I would be happy to watch another one because I wasn't fully happy with the end.
However, the second season need to be the last with nothing hanging, otherwise I won't watch.

I don't think there is a doubt about their acting skills. They are both very good.
I also think they have very good chemistry, BUT I still think Seo Yea-ji had more chemistry with him in IOTBNO, and I think she would have pulled off playing hae-in as well.

But, I honestly have no complain about Kim Ji Won, and I am loving their scenes together. I am just saying that I can see someone else playing her role.

There has to be a balance.
In my opinion, the tention (eventhough we roughly know what will happen) should be maintained for sometime.
If they resolve their issues quickly, what is there left to watch, unless the side story(ies) are very interesting. It is very early days, but atm, the only potentially other good line would be them against family.
So, you need a good writer to keep the tention in interesting way without the feel of being a drag. I don't know how lol. If I knew I would be writing a drama instead of commenting lol.
But, I know I need them to go for a bit, because that is the fun for me at least.

The way it is written, I would say 8 was enough.
I am normally very good at dropping series, but I didn't drop this because I actually liked its premise very much, and kept hoping that it will get better. Also, they usually had some good parts in each episode.
However, considering it is 16 episodes, this is probably going to end up my lowest rated completed series.
