What you think as "he doesn't convince me enough whether he is really emotionally available for her" is his overly melancholy, and overthinking behavior. Ep 06 is him already move-on, and to begin to learn about Mu-Hee.

But like you said, first part of the drama exploring different things about them. First part is about their connection, interaction, and finally Ho-Jin's iniative to learn about Mu-Hee. Second part is about their past trauma or their unresolved past, then how they heal from it. (this part is when they learn to know eachother).
If we pay attention to their story, we will understand why Ho-Jin is overly melancholy and indecisive. He think in a realistic ways, and many times overplanning something, overthinking. He will learn through Mu-Hee.
the cast, story, cinema graphics, the characters literally everything about this drama is perfect and their feelings…
Do Rami is alcohol version of this drama. In many Kdrama, when sober and they can't say something, sometimes they use alcohol as a way to make the character to tell their hidden thought.
I like author Kim's words to Ho-Jin. He said something like this : "there are as many languange exist as many as human population, because every person have their own languange." So to understand someone, it's like studying languange, we need to learn about them. I think it's after this word then Ho-Jin started to learn to know Mu-Hee
then Do Rami is their interpreter when Ho-Jin and Mu-Hee lost in translation.

for me, the drama is entertaining. it's not typical Kdrama that have romance and comedy in it. This one is melodrama with some heavy understanding from the middle. some comments called it dragging.
I think the number of episodes is just perfect as it is. It focusing to both lead's journey. It didn't felt dragged…
