Bluekitchen:

Gado-gado salad (I used RecipeTinEats' recipe -- I love her!)

I'm not familiar with this salad.  What's in it?

It's an Indonesian dish. Steamed or blanched vegetables (beansprouts, green beans, cucumbers or anything you'd like), boiled eggs, fried tofu served with a spicy and creamy peanut dressing. The sauce also goes well with chicken skewers or rotisserie chicken.

I make this when I need to use up vegetables or am super busy and need to meal-prep.  I steam everything in the microwave and make the eggs and tofu ahead. Super healthy/diet-friendly too!
