I promise you Someday or One Day is not what you think it is. There are some similarities to your recommendation Meet Me at 1006, so I think you will enjoy it. I usually recommend Meet Me at 1006 to people who don't know what to watch after Someday or One Day. There's good reason you see so many recommendations for it and it is rated highly on mdl and douban. At the very least, the songs are so memorable that they are covered on various variety shows.

I don't think this is possible. Chinese dramas are fully filmed and go through censorship approval before airing.
There are two different sets of episode cuts for this drama though, so that might be what you're seeing. It is the same content just cut at different lengths so the episode counts don't match up.

The time travel mechanics are not really explained but she time traveled when she touched the door handle at the cafe. Her mission showed up as a text on her phone.
